Applesauce Granola

It’s no secret that we love granola around here.  This granola recipe has quickly become a new favorite around here because it doubles in so many wonderful recipes!


It’s a great addition to yogurt, ice cream, or even a quick spring berry rhubarb crisp. It also works excellently in granola bars – or, made into old fashioned oatmeal.  I love having a batch of this on hand to use as we need. 



Applesauce Granola – Adapted from Fake Ginger
Ingredients
  • 4 C old fashioned oats
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/2 C applesauce, unsweetened
  • 1/4 C brown sugar
  • 1 T honey
  • 1 T olive oil or butter
Directions
In a medium saucepan, combine the 1/2 C applesauce, 1/4 C brown sugar, 1 T honey, 1 T olive oil (I used butter here) and 1/4 tsp. salt.  Warm the mixture and then set aside. 



Add in the 4 C oats along with 1 tsp. cinnamon. 



Stir until all the oats are well coated.  Then, spread the mixture on a large half-sheet cake pan, or into a 9x13 baking dish. 



Bake at 300 degrees for 50 minutes, stirring every 10. 

Cool completely & store in an airtight container.
